2008 SPARKLING SAUVIGNON BLANC

In cooler climates, Sauvignon Blanc display the most splendorous characteristics– those of rich passionfruit, gooseberries and herbaceousness, which are often lost to the warmer conditions of the Hunter Valley. However, in 2008 we experienced a colder summer, enabling the veracity of this grape to come through.
The Sauvignon Blanc characters definitely prove on the bouquet – lovely fresh passionfruit alongside the more dominant zesty citrus tones: lemons and limes; as well as Sauvignon Blanc’s green undertone, in this case a hint of fresh asparagus peeps though.
Being a vibrant and fresh style, the winemaker has further given emphasis to this through using the Charmat method which has maintained the bright liveliness of this Sparkling wine. Bottle fermentation would only have weighed the fruit down, whereas the tank ferment has retained the true delicate varietal character and enhanced the big hugging bubbles.
The palate displays sherbet and finishes crisp and dry- the mouth feel is dazzling.

2006 LATE HARVEST TRAMINER

2006 was one of those warmer years in the Hunter Valley, enabling the Traminer grape to fulfill all of its overgenerous characteristics
– best shown by harvesting the fruit later in the Vintage.
A pale, yet golden colour, this wine displays a definite floral overtone – delicate citrus blossoms and rose petals.This leads into the headier hue of dried apricots.
With more oxygenation, tropical fruits steal the show – with lychees and a slight melon character following the latter.
The palate is rich, with excellent length shown by the generous fruits which have followed from the aroma onto the smooth palate.
A wine to drink young with Indian food - the aromatics of both would be a perfect match. |

2005 RIESLING

Canberra region, with its hot summer days and milder cooler nights is fast emerging as a leader in growing high quality Riesling.
The secret is with the longer ripening periods - sugar develops in the fruit in the heat of the day, and recedes during the coolness of the night, increasing the complexity of the characters. With only being in the bottle a few years, the development of this wine is appealingly steady.
Secondary characteristics are starting to develop, those of slight kerosene and a steely nose character. Apart from this, the youth subsists through the lovely fruit characters of grapefruit, both on the nose and the palate, with hues of green honeydew melons.
The palate is clean and dry on the finish.
Drink now or further cellar for 3-5 years. |

| Semillon, mostly iconic for the Hunter Valley due to the characteristics gained through ageing styles can be mostly glorified.
This Mudgee Semillon is the perfect drink-now style, no need to cellar for long periods in order to gain an approachable full flavoured palate.
This wine displays generous rich and ripe fruit characters, with excellent balanced acidity to compliment seafood.
The colour is of bright straw, and the palate finishes clean. Citrus fruits and fresh green pears envelop the nose. |

Pale flaxen colour, the bouquet is tight and with more air, becomes more generous. Green Granny Smith apples are the first to display their aromas, alongside the delightful confection of pink musks.
The palate shows a slight green hint of limes, and then sweet pineapple which follow onto the palate in a burst of citrus and tropical flavours.
The mouth feel is long and has a clean sweep finish, perfect for spicy foods like Thai or even seafood. |

The bouquet here is sweet ripe mandarin fruits leading to the varietal trait of tomato leaf, consequent from the proportion of Sauvignon Blanc in this wine.
The palate is limey because of the Semillon - with the hint of honeydew melon derivative of Sauvignon Blanc.
The palate finishes quickly, but the mouth feel of citrus remains long-lasting.
The Hunter Valley is renowned for its excellent production of Semillon and the Adelaide Hills sport one of Australia’s best climatic conditions for the cooler climate Sauvignon Blanc prefers. |

2005 MERLOT

Wow!
The aroma of this wine blasts straight through as soon as its opened!
Mudgee is an excellent region for producing reds, with a milder climate and the dense heat required for ripening in Summer. This enables a normally light and lean variety such as Merlot to envelop rich intensity of fruit flavour.
The colour is brick red, and the spiciness comes out in both the palate and the aroma – cloves and cinnamon.
There is a hint of sweet fresh basil, and on the palate - ripe plumy and jammy fruits hit the front of the tongue which rush through the sides of the mouth, leaving the firm mouth feel of cedary oak and tannin behind.
Delicious and heavenly for a hearty steak.

2006 BROKE FORDWICH CABERNET SAUVIGNON

Sweet nougat on the nose followed by vanilla and the hue of French Oak.
The colour is resplendent, with a dark purple tone – from the youth of this wine. Cabernet Sauvignon from the Hunter Valley is increasingly difficult to produce due to the required long ripening period and chewy tannin.
The flavours are complex, not only minty but also a hint of eucalypt – but ever-green and even stalky.
The aromas are sweet berry, black currants and a long, strong mouth feel. Lamb dishes and Cabernet Sauvignon are a match made in heaven, the thick tannins are neutralized by the fat content in the meat which enables the full depth of fruit to come to the fore.
Drink now or cellar 4-6 years. |

The Mudgee region enjoys a milder climate with a cooler climate in Spring to the warmer summer months perfect for the ripening of rich full bodied reds.
Dark Brick red in colour, white pepper dominates both the palate and bouquet of this wine. Cedary oak and spiced plums lead to the slightly jammy texture.
Cinnamon and nutmeg also play on this easy drinking style, it is almost reminiscent of an old fashioned Christmas Cake.

BOTRYTIS SEMILLON

The colour is golden and glistens beautifully in the light.
The nose still shows fresh fruit characteristics but this slowly merges into poached apricots in syrup and also on the palate with dried apricots.
A slight citrus marmalade plays with light Australian bush honey. Dried fruits dominate, finishing with distinct delicious dried apples.
This “sticky” screams for a cheese plate, especially blue cheeses or even a light dessert. |

Michael Hudson
Wine Maker
In May 1992, at the tender age of 18, Michael started working in the wine industry.
Initially employed with Petersons Wines with a 12mth viticulture traineeship but stayed on for 4.5 years working vintage in the winery, where he was mentored by the legendary Gary Reed and he also held the mantle of Quality Control Officer for Hunter Valley Wine Contractors Bottling Line.
He then realized he had a flair for winemaking and made his move to Briar Ridge to gain more experience, where he stayed for the next 4.5 years, working alongside Neil McGuigan.
Serenella was his next port of call where he was employed as assistant winemaker for 2.5 years under the tutelage of Tish Cecchini.
After leaving Serenella, he returned to Petersons for 6mths to commission the new bottling line.
He then moved on to work with Andrew Thomas at Thomas Wines for 2.5 years before returning to work for Colin Peterson as Savannah Estate’s winemaker.
Michael has a natural ability to produce top class wines and now has over 15 years industry experience and knowledge specialising in the areas of winemaking and production.
